The cut our grandparents never wasted, and the most nutrient-dense thing in the freezer. From our 100% grass-fed herd, raised on rotating pasture in Meaford.
Soak it in milk for a gentler flavour, slice thin, and keep the pan hot so it stays tender. With butter and onions it wins people over. Some customers blend a little into ground beef dishes for the nutrients alone.
