Bologna the way it tasted before it became a punchline. An old-fashioned recipe of grass-fed beef and pork fat, seasoned with sea salt, maple syrup and spice, cured naturally.

Slice it thick and fry it for breakfast, or thin for the lunchbox. Both camps are right.
