Two chops per package, cut thick from our heritage-breed pork. A hot pan, a good sear, and a rest is all they ask; the fat does the seasoning.
Tamworth and Hampshire pigs, outdoors year-round through bush and pasture, fed peas, oats and barley grown and ground fresh here. Pork with this much character cooks differently. Better.
