Thick-cut side bacon, dry-cured with maple syrup and sea salt and smoked over natural maple wood. The strip the rest of breakfast organizes itself around.

The pork comes from our heritage-breed pigs, raised outdoors year-round through bush and pasture on farm-grown feed. More marbling, more flavour, no shortcuts in the cure.
